During a family dinner at Olive Garden I ordered the Zuppa Toscana soup. It sent my 15-year-old taste buds on a journey of a lifetime. Determined to have this soup again, me and my mother, as we often do when we find a dish we like, attempted to replicate the meal. Through some trial and error, we were able to come up with this modified and, I would argue, far better soup! Olive Garden's Zuppa was more of an inspiration for our recipe as we changed many things like using hot Italian sausage, red pepper flakes, and adding a great deal more garlic and cayenne. The spicier the better we always say! This recipe turned out to be a crowd favorite at my mother’s place of work. Enough so that she won first prize in a soup competition and with that prestigious medal, a paid trip to Portugal!
